Green Tea

Green tea is nearly completely unoxidized.  When the young leaves are picked, they are briefly withered, then quickly heated by either roasting or steaming to halt the enzyme responsible for oxidization.  Roasting results in amber like, muted-green colors with bolder, sometimes earthier tones, whereas green tea which has been steamed produces headier, grassier flavors with brighter, more vibrantly colored liquor.   ​Every one of our green teas have their own stories to share, speaking to the character of the land and the skill of the maker who nurtured them.  They tell of mountainous microclimates above the clouds, wild ancient tea forests, and the wise hands which shape their leaves with the utmost detailed precision and care.  Our green teas are delicate, complex and unique. Each an individual personality in their own right. ​All our teas are certified organic, hand-plucked and hand-processed with time-honored traditional methods.  They are always seasonally harvested in small batches to ensure sustainable cultivation of the tea plants and the health of their surrounding ecosystems.
